Leuconostoc (family Streptococcaceae) A genus of Gram-positive bacteria in which the cells are spherical or lenticular and usually occur in pairs or chains. Chemo-organotrophic, they can grow in the presence or absence of air. There are several species, found for example in fruit and vegetable matter, and dairy products; none is pathogenic. Some strains are used in the manufacture of certain dairy products, e.g. butter.
