saponins Group of substances that occur in plants and can produce a soapy lather with water. Extracted commercially from soapwort (Saponaria officinalis) or soapbark (Quillaja saponaria) and used as foam producer in beverages and fire extinguishers, as detergents, and for emulsifying oils. Bitter in flavour. See also quillaja.
