crispbread Name given to a flour and water wafer, originally Swedish and made from rye flour, but may be made from wheat flour. It has a much lower water content than bread and some brands are richer in protein because of added wheat gluten. Three pieces of crispbread (30 g) provide up to 3 g of dietary fibre and supply 100 kcal (420 kJ).
