Demarest once told CA: "My motivation and attitudes toward teaching, writing, and practical service were stimulated by travel and lecturing in forty countries in Africa, Asia, and Europe, while I resided overseas from 1963 until 1975. I have a special interest in the concerns and problems of the developing world.

"My wife and I began our careers when an international organization invited us to establish a Christian college in Nigeria. A number of students we were privileged to train have since risen to significant posts of leadership in government service, in various professions, and in the Christian ministry. During the Nigerian civil war of 1966 to 1968, we were redirected to the nearby country of Liberia, and we continued our teaching at the University of Liberia. I am convinced that a person's education and preparation for life are not complete until some time has been spent overseas assisting others less fortunate. As Jesus said, 'If anyone wants to be first, he must be … the servant of all.'"
