African-American chef. Born 1916 in Freetown, Virginia; died Feb 13, 2006, in Decatur, Georgia; granddau. of freed Virginia slaves.

Celebrated cook, ran the kitchen of Café Nicholson in New York City (1940s); wrote 4 cookbooks, including The Taste of Country Cooking and The Gift of Southern Cooking. Named Grande Dame of Les Dames d'Escoffier International; inducted into James Beard Hall of Fame (2003).
