trigonelline A metabolite of niacin, chemically N‐methylnicotinic acid, excreted in the urine in small amounts after consumption of relatively large amounts of nicotinic acid. It also occurs in some foods; it has no vitamin activity, but a considerable amount is converted to niacin during the roasting of coffee.
