genetically modified food (GM) Food that has been produced using genetic engineering techniques. The genetic makeup of crops is altered so they can resist insects and diseases, increase protein content or create other characteristics. Opponents of GM food have labelled it ‘Frankenstein food’ and some food stores have removed those products. GM crops are increasing, however, and GM food such as soya beans, maize and corn are commonly available. The first approved GM food, a tomato developed for a longer shelf life, was sold in the USA in 1993.
