djenkolic acid A sulphur‐containing amino acid found in the djenkol bean, Pithecolobium lobatum, which grows in Sumatra. It is a derivative of cysteine, and is metabolized but, being relatively insoluble, any that is not metabolized crystallizes in the kidney tubules causing renal stones.
