Edam Pale yellow, semi‐hard Dutch cheese usually round in shape with red wax coating (black for well‐matured Edam). A 30‐g portion is a rich source of vitamin B12, a source of protein and niacin, contains 8 g of fat, 230 mg of calcium and 300 mg of sodium; supplies 100 kcal (415 kJ).
