Edam Pale yellow, semi‐hard Dutch cheese usually round in shape with red wax coating (black for well‐matured Edam). A 30‐g portion is a rich source of vitamin B12, a source of protein and niacin, contains 8 g of fat, 230 mg of calcium and 300 mg of sodium; supplies 100 kcal (415 kJ).

Edam, Canada, The Netherlands The Netherlands: so‐called because of the dam built on the River Ye, the name of which comes from the Old Dutch e ‘river’. The town is famous for its semi‐hard, distinctively red‐rinded cow's milk cheese.

Edam , town (1994 pop. 25,640), North Holland prov., N central Netherlands, on IJsselmeer lake; chartered 1357. It is a picturesque town that attracts many tourists. Edam is noted for its cheese.
