flam·bé / flämˈbā/ • adj. 1. (of food) covered with liquor and set alight briefly: crêpes flambé. 2. denoting or characterized by a red copper-based porcelain glaze with purple streaks. • v. (-bés, -béed / -ˈbād/ , -bé·ing) [tr.] cover (food) with liquor and set it alight briefly.

flambé (flamber) Brandy or other spirit is poured over the food (particularly crêpes and Christmas pudding) and set alight before serving. Also the process of singeing poultry before cooking.
