annatto

annatto (anatto) Also known as bixin, butter colour, or rocou; a yellow colouring (E‐160(b)) extracted from the fruit of the tropical shrub Bixa orellana. The main component is the carotenoid bixin, which is fat‐soluble. It is used to colour cheese, dairy produce, and baked goods. The seeds are used for flavouring in Caribbean and Latin American foods.
