polyunsaturate Type of fat or oil that has molecules of long carbon chains with many double bonds. Polyunsaturated fats exist in fish oils and most vegetable oils. At room temperature, unsaturated oils are liquids and saturated fats are solids. Polyunsaturates, which have low or no cholesterol content, are used in margarines and cooking oils. They are considered healthier than saturated fats.
