Palmitic Acid

"This molecule of palmitic acid contains a long tail of 16 carbons bonded to hydrogen atoms. It is this hydrocarbon tail that gives the molecule its overall hydrophobic character. In contrast, the oxygen-containing carboxyl group on the other end is very polar." Essential Cell Biology, Second Edition by Alberts, Bray, Hopkin, Johnson, Lewis, Raff, Roberts, Walter copyright 2004 by Garland Science Publishing
