offal
offal Corruption of ‘off‐fall’. (1) With reference to meat, the term includes all parts that are cut away when the carcass is dressed, including liver, kidneys, brain, spleen, pancreas, thymus, tripe, and tongue. Known in the USA as organ meats or variety meat. (2) With reference to wheat, offal is the bran discarded when milled to white flour (see wheatfeed).
