Cyperus
Cyperus (family Cyperaceae) A genus of usually perennial herbs that have stolons, tubers, or rhizomes. They have erect stems with a leafy base. Flowers are borne in a terminal umbel. The fruits are trigonous nuts. C. papyrus (paper-reed) is a riverside plant growing up to 4 m high whose stems used to be split into thin strips to make papyrus paper. There are about 600 species, found in tropical and warm temperate regions.

tiger nut
tiger nut Tuber of grass‐like sedge, Cyperus esculentus, also earth or ground almond, chufa nut, rush nut, nut sedge, 5–20 mm long, usually available in partly dried condition. Mainly starch and fat (75% mono‐unsaturated); a rich source of dietary fibre (19 g/100 g). See also horchata de chufas.
