cystine The dimer of cysteine produced when its sulphydryl group (—SH) is oxidized forming a disulphide (—S—S—) bridge. Such disulphide bridges are especially important in maintaining the structure of proteins, and also in the rôle of the tripeptide glutathione as an antioxidant.
