ABSTRACT

The objective of this study was to investigate the lysis of a highly autolytic strain of Lactococcus lactis ssp. cremoris AM2 in a model cheese made from concentrated ultrafiltered milk. From the same initial ultrafiltered retentate inoculated with L. lactis AM2, 5 cheeses were made by the addition of rennet at different pH values (6.6, 6.2, 5.8, 5.4, and 5.2). Lysis was monitored by measurement of the release of lactate dehydrogenase, an intracellular marker enzyme, and by im...

A Hybrid Model for Erythrocyte Membrane: A Single Unit of Protein Network Coupled with Lipid Bilayer
Biophysical Journal ; ABSTRACT To investigate the nanomechanics of the erythrocyte membrane we developed a hybrid model that couples the actin-spectrin network to the lipid bilayer. This model features a Fourier space Brownian dynamics model of the bilayer, a Brownian dynamics model of the actin protofilament, and a

Application of Exopolysaccharide-Producing Cultures in Reduced-Fat Cheddar Cheese: Cryo-Scanning Electron Microscopy Observations*
Journal of Dairy Science ; ABSTRACT The microstructure of reduced- and full-fat Cheddar cheeses made with exopolysaccharide (EPS)-producing and nonproducing cultures was observed using cryoscanning electron microscopy. Fully hydrated cheese samples were rapidly frozen in liquid nitrogen slush (-207C) and observed in their
Influence of Degree of Protein Aggregation on Mass Transport Through Wheat Gluten Membranes and Their Digestibility-An In Vitro Study
Cereal Chemistry ; ABSTRACT The influence of the network structure of wheat gluten on the barrier properties against enzymes was investigated in vitro. The changes in the network structure were introduced by different temperature treatments. The modifications were assessed with solubility studies of wheat gluten
Quality of Spaghetti Made from Full and Partial Waxy Durum Wheat
Cereal Chemistry ; ABSTRACT The waxy character is achieved in durum wheat (Triticum turgidum L. var. durum) when the granule-bound starch synthase activity is eliminated. The result is a crop that produces kernels with no amylose in the starch. The presence of two Waxy loci in tetraploid wheat permits the production
