Abstract: This chapter examines the restructuring of the mushroom industry of southeastern Pennsylvania from 1960 to 1990. During this period, mushroom producers underwent major changes in their crop production that included the introduction of a new labor force-Mexican migrants-who since then have altered the ethnic and cultural landscape of the region.
