Pick a clam, any clam; A primer for seafood lovers

So, you've got a craving for the sweet, briny taste of clams, but have no clue what bivalve to use in which recipe.

Check out this simple primer to help decide which shell to crack open and which to leave closed.

First of all, for those of you who are weak of stomach, the edible part of a clam is mostly muscles that hold the shell closed, the neck through which the clam takes in water, and a foot that moves the clam through sand.

Bivalves are generally divided into two families - soft-shell and hard-shell. Within those families are several types, in a huge variety of sizes.
