MACKEREL ON THE MENU

Mackerel is one of those funny fish that make even seafood lovers
want to slink down into their chairs to avoid it. It just seems so,
well, fishy. Some people think that fish isn't supposed to taste
like the sea and, worse, look dark as beef. (Swordfish and tuna seem
to be the exception here, maybe because they're big and imposing.)
Mackerel, in its single-serving size, even looks wimpy, and it tastes
so oily, it could be a large sardine. That, of course, makes it
wonderful on the grill or under a coating of anything that might
overpower other fish, like Dijon mustard or lots of sliced onions ...
