Rice's Sticky Business

WHEN YOU WERE a kid, you probably had only one concept of
"rice": It was white, bland and a little gummy, unless you went to
public school, in which case it was a lot gummy. So-called
"converted" rice was invented primarily to get rid of that
starchiness, and there are plenty of Southerners who can't abide any
brand but Uncle Ben's.
But there are remarkably wide variations in rice, and even in
