Pinch of dried chervil adds subtle flavor to chicken soup

My herb of the month for November is chervil. It is a mild- flavored member of the parsley family, with curly, dark-green leaves and an elusive anise flavor. Also, along with chives and tarragon, chervil is an indispensable ingredient in the French "fines herbes" mixture. Though most chervil is cultivated for its leaves, the root is edible and was enjoyed by early Greeks and Romans. Today, it is available dried, but it has the best flavor when fresh.
