Almond Joy: Once used primarily for baking, almonds now star in sauces and soups

ALMONDS are climbing out of the pantry and being rediscovered as a
workhorse of savory cooking. Chefs now tap into the almond's culinary
heritage as a key component of sauces, soups, dressings and spreads.
At Bay Wolf restaurant in Oakland, Spanish foods are currently
featured on the menu. "Our weather conditions are similar to Spain's.
During August, we have a bounty of tomatoes and almonds. So this is
the time to make romesco sauce thickened with new-crop almonds," says
owner Michael Wild.
