Among the many grains eaten the world over, no other comes close
to rice in popularity. Rice figured on the menu of our prehistoric
ancestors as far back as 5,000 years ago, and is still a daily staple
for more than half the world's inhabitants. Although per capita
consumption of rice has climbed to more than 20 pounds per year in
the United States, it hardly compares with a country like Burma,
where each citizen is said to eat more than 500 pounds of the grain
annually.
Today, California supplies 20% of the country's rice, placing it
second only to Arkansas in the field of rice ...
