Go nuts over chicken salad

For a spring luncheon, it's hard to go wrong with a good cashew chicken salad. This recipe from Taste of Home magazine, is served on a bed of garden greens or on a croissant. It is loaded with chicken and has a pleasant crunch.

Creamy Cashew Chicken Salad

4 cups cubed cooked chicken

1 cup chopped celery

1/2 cup chopped green pepper

1 jar (2 ounces) diced pimientos, drained

1/2 cup mayonnaise

1/3 cup whipping cream

1/4 cup sour cream

3 tablespoons thinly sliced green onions

2 tablespoons minced fresh parsley

1 1/2 teaspoons lemon juice
