Almond flour is actually not a flour at all, but very finely
ground almonds. Although you can grind nuts in a food processor
yourself, commercial nut flour has a much finer consistency and
contains less oil than homemade attempts. Almond flour--or any nut
flour--can be substituted for up to 2/3 of the all-purpose flour in
most baking recipes. (Jewish cooks make such substitutions because
the dietary laws for Passover preclude the use of leavening agents.)
