A balmy morning in the Caribbean. I claim a chair on Anguilla's Shoal Bay West, spread my towel and dig a trashy paperback out of my beach bag. The sky is robin's-egg blue, the sea a serene turquoise. Foamy wavelets erupt on shore; the water temperature is as pleasantly cool as the sun is warm.

Around noon, the smells of garlic and rosemary beckon me -- barefoot, sandy and somewhat salt-encrusted -- to abandon my sun- worshiping perch for, some 20 paces away, Trattoria Tramont, as fine an Italian bistro as you'll find anywhere.
