Carrots offer eye-opening benefits
|
Over the years foods have gone in and out of favor, but the
humble carrot has continued to be a star in the vegetable world.
One average-size carrot (about 7 inches long) will give you
enough beta carotene to provide what some scientists think is a
cancer-protecting property of the nutrient. That much beta carotene
will also be converted by your body to about four times the
recommended daily allowance (RDA) of vitamin A.
It will also give you about 11 percent of the RDA for vitamin C
and a respectable amount of fiber and potassium. And calories -
forget about it. Only about 30 per carrot.
