`I wait all year for this season to come," said Anthony Mantuano, whose idea of heaven is fresh tomatoes.

"I don't use tomatoes as much during the winter. Since the taste (of winter tomatoes) is inferior, we'll use them as a garnish for color, not as a full flavoring for a dish."

Now that tomatoes are in their prime, Mantuano uses them abundantly, yet simply.

"I look for tomatoes with a variety of colors and flavors. When I do a tomato salad I use a slice of each type so people can appreciate the subtleties of each one," he said.
