Tamales get expert's touch // Vietnamese cook adds a twist

My-Kha Trinh's laugh sounds like a wind chime when someone asks her what a Vietnamese cook knows about tamales.

"My grandmother used to make Vietnamese tamales - banh la - by wrapping rice in banana leaf," said the diminutive restaurateur.

The banh la were stuffed with savory fillings of ground pork or shrimp before steaming, Trinh said.

On a vacation trip to the Yucatan city of Merida, Trinh was struck by how similar tamales were to her grandmother's savory rice bundles.
