Peppers aren't the same old stuff

Growing up, I despised stuffed peppers. Mixing meat, rice and
vegetables all in one neat package was too much for a picky youngster
who preferred more simple - and separate - fare. Perhaps it was the
dull, drab gray-green color, the result of long baking, that caused
my pepper panic.
Since I began using a microwave oven, however, I have made
peace with the portly pepper. Microwaving results in peppers with a
brighter color and improved shape. Cooking time is slashed in half.
