Remember when yogurt seemed a little weird? Something only your European-born grandfather ate? Tastes have changed. Now a little culture goes a long way.

Yogurt has become as all-American as ice cream. For anyone watching calories and saturated fat, it's more healthy, as well.

Yogurt also is valuable as a cooking ingredient. Indian cooks regard it as a staple, indispensable to their classic dishes, according to food writer Julie Sahni. Tandoori chicken gets its tangy, sharp flavor from a yogurt marinade.
