This dish tastes like Christmas, commented the other half of Two's Company when he previewed a holiday recipe for the column.

It's high praise, and I concurred, of course.

The recipe, rock Cornish hens stuffed with a combination of shallots, thyme, corn-muffin crumbs and pistachio nuts, is especially festive.

Serving someone a whole, stuffed hen is a generous touch. It has all the drama of the larger birds - chicken, duck, goose or even turkey - without the leftovers. The filling is one of the most flavorful my Two's Company audience claimed ever to have had.
