Fennel, with its snowy-white, fan-shaped base, slender green
stalks and abundant feathery foliage, has an attractive, whimsical
quality. It is pretty enough to add charm to the vegetable garden,
paired with something as demure as lettuce, or the ornamental garden,
even with something as riotous as dahlias.
Those familiar with fennel know of the bulb's definite, though
subtle, licorice aroma and flavor; the tops impart that same scent,
but with a sweet perfume that adds a note of complexity. In salads,
soups or sauces, the flavor is refreshing and light, like spring
