Jo-Etta Parada bustles about her tiny diner preparing burritos, burgers and green chili. The air is warm, carrying the scents rising from the grill. One of her four daughters -- a shy, polite girl -- works the front counter for her.

"We're hard workers," she says of herself and her husband, "and my girls are too. They know hard work."

Parada is a kind woman from a big family who likes to take care of people. She mixes a little love into those blue plate specials, ready to mother the masses.
