The worst oyster season on record is drawing to a close, but on
the north prong of St. Jerome Creek, the bivalve business has never
been better.
There, on a bay inlet 70 miles southeast of Washington, Richard
Pelz tends his floats, where oysters grow plump and disease-free near
the water's surface.
Pelz, 53, is engaged in oyster aquaculture, a controversial method
of growing oysters for the restaurants of the metropolitan area. He
is practically the only one in the region doing so, in part because
the permit process is so daunting.
