What makes a goat the best attraction at a neighborhood get-
together? Santiago Calderon has an easy answer.
"Cows are too big. And pigs are just too messy," says Calderon,
speaking in Spanish at the butcher shop where he works in Sunnyside.
"With a goat, you can kill it, skin it and cook it. In two hours,
you have a meal." Although still too small for most to notice, a
growing taste for goat is showing up at butcher shops, a few local
restaurant menus and causing a minor stir among academics. If the
