Parsnip deserves respect

If ever there were an ugly-duckling vegetable, it would be the parsnip. Judged on looks alone, the parsnip couldn't be much less glamorous. There's no question that it's a root. It resembles a carrot but lacks its cousin's appealing orange hue, being instead a kind of dirty-cream in color.

But parsnips weren't always the Rodney Dangerfield of the vegetable world.
