The other day, I noticed there was a clam festival at the Chart
House. ("Mad About Mollusks!" read a press release. "Clams and More!"
exclaimed the menu. "Balmy for Bivalves" added I.)
I like clams quite a bit, though I'm not sure why. They seem to
be a poor man's oyster, a shellfish for thosewho want their shelly
critters on the understated side of things. Unlike oysters, which
have a tangibility that can beimposing (many are large enough to
border on the obscene), clams are delicate...
