Joel Bly Findlay made a career of playing with food, tweaking culinary standards into innovations like his "bacon, lettuce and tomato soup."

For 17 years, Mr. Findlay's customers at 302 West Restaurant in Geneva came to expect gourmet food served up with a lighthearted attitude, including vivid and humorous wine descriptions, such as one that compared a champagne to "angels peeing on your tongue."
