The GBP 10m 'Hotel with no Wine' plans to open for Festival

THE HEAD of a boutique hotel chain has vowed to press ahead with
a GBP 10 million development even if councillors reject a bid to
exempt it from a bylaw restricting alcohol licenses.
Robert Cook, chief executive of Hotel du Vin, admits the company
"failed to do its homework properly" before applying for a licence
for the Edinburgh site last summer.
He insisted the venture will be at the forefront of fine dining
in the capital if it is granted a full licence on Monday.
