Bright-yellow sea urchin, a delicacy in cuisines around the
world, is becoming more popular in the United States. And local
restaurants are using uni, as sea urchin is also known, that's
harvested just off the coast of Maine. Chefs say that the region's
icy winter water temperatures mean prime conditions for uni that's
smooth and creamy.
