FOR THE LOVE OF FOOD Omelets meant to be impromptu

I know an omelet should not be fussy. It should be improvised.
When some ham in your refrigerator is ready to spoil or there are
vegetables left over from a saute or some salsa calling to you in the
morning - "Senor, don't forget me, I can make your breakfast
delicious" - you decide it is time for an omelet. An omelet is not
something for which you go to the grocery store or for which you
prepare a special seasoning or an accompanying sauce from scratch.
That is why, even when prodded by my family to share this recent
omelet creation, I hesitated. It went against my notion of an
