Johnny Kolakowski will have to defend the muskrat special he is serving Catholic patrons of his Kola's Kitchen restaurant in Wyandotte, Mich., during Lent at a hearing before Val Vangieson, the Wayne County Department of Public Health food director.

"They say I'm serving rodent," Kolakowski said. "If they want me to challenge the law, I'll do it . . . . "

Vangieson said muskrat also is illegal because it comes from unlicensed sources. Meat served in Michigan restaurants must be obtained from suppliers approved by federal, state or local authorities.
