ASPARAGUS, or grass as it's known in the trade, is a perennial
plant with an underground stem that produces edible shoots. The three
most common varieties are white asparagus, which has a yellowish tip
and is dug up in a similar way to potatoes; large white asparagus,
which has large white stems; and green asparagus. It is a native of
central and southern Europe but is also grown in Central America,
which means that while the British season starts towards the end of
June, we chefs can get asparagus all year round. In France they have
