Hen surprise: Many possibilities with Rock Cornish hens

Chefs are a resilient lot. They are able to throw together a meal fit for professional judging even when the main ingredient remains a mystery until an hour before deadline.

This was a challenge for four chefs at the Iron Chefs Cookoff held recently in Glen Burnie to mark the accredition of the Culinary Arts Operations degree at Anne Arundel Community College.

The invited restaurant chefs were allowed 60 minutes to turn Rock Cornish game hens, the mystery item, into four servings of a winning dish. The cook-off was part of the celebration at the Hospitality, Culinary Arts and Tourism ...
