Slow Molasses, Fast Flavor; The Sweetener With Soul
|
Molasses hasn't been what one would call a trendy ingredient in
years. In fact, it's been a century or so. In the 18th and 19th
centuries, however, it was America's preferred sweetener, and a
major commodity in international trade.
Infinitely more flavorful than sugar or honey, and richer in
vitamins and minerals, molasses is a byproduct in the process of
making sugar. It is one of the primary ingredients in Indian
pudding, New England baked beans and Pennsylvania Dutch shoofly pie.
It is often added to dark breads, like pumpernickel, as a coloring
agent and flavoring.
