Molasses hasn't been what one would call a trendy ingredient in
years. In fact, it's been a century or so. In the 18th and 19th
centuries, however, it was America's preferred sweetener, and a
major commodity in international trade.
Infinitely more flavorful than sugar or honey, and richer in
vitamins and minerals, molasses is a byproduct in the process of
making sugar. It is one of the primary ingredients in Indian
pudding, New England baked beans and Pennsylvania Dutch shoofly pie.
