Ask a cattle rancher in Texas and he will tell you 'Brahmans' produce the
best beef in the country. That the name refers to a community that does not
eat meat, much less beef, is none of his concern.
In his lexicon, 'Brahman' refers to a breed of cow first brought from India
to the US in the late 1800s, which has once more hit the headlines.
Milton Thomas, cattle geneticist at the State University of New Mexico, is
developing a new breed of cow that, he says, will be able to live on dry
grass, reproduce annually and yield high-quality meat.
