WESTBROOK-- Demosthenes "Papa Demo" Gistis came to America for the chance at a better life. He found his niche in the kitchen. A chef for nearly his entire adult life, he built his career on a solid work ethic and a good palate.

Mr. Gistis, of East Valentine Street, died Tuesday. He was 68.
