WINTER winds blow over the tile-roofed ancient house but Dang Thi Mai does not feel the cold. She is warmed up by the heat of 10 coal-fired ovens in the kitchen. Her face reflects a warm red while she stirs up the pemmican in a one meter-diameter pan with two big bamboo chopsticks. The middle-aged woman periodically asks others to take heed of the color of the pemmican being dried.
